Little Billy's Pesto Protein Breakfast Scramble

Ingredients:
- 1/4 pound ground turkey
- 1/2 onion, diced
- 1 clove garlic, minced
- 2 cups fresh spinach leaves, roughly chopped
- 3 large eggs
- 2 tablespoons Little Billy's Nut-Free Pesto Goat Butter
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper, to taste
- 1/2 ripe avocado
- Pinch of red pepper flakes
Instructions:
- In a bowl, whisk the eggs until well beaten. Set aside.
- Heat 1 tbsp of Little Billy's Nut-Free Pesto Goat Butter in a large skillet over low heat until melted.
- Add the minced garlic and ground turkey. Breaking up the turkey with a wooden spoon, thoroughly coat it in the melted butter and garlic mixture. Increase heat to medium, and cook until turkey is lightly cooked but not yet browned (about 3-4 minutes). Season with salt and pepper.
- In the same skillet, add the diced onion. Sauté until the onion is soft and translucent, and the turkey has now lightly browned (about 3-4 minutes).
- Add the chopped spinach leaves and cook until wilted, (about 1-2 minutes).
- Push the turkey and spinach mixture to one side of the skillet. Add the remaining Little Billy's Nut-Free Pesto Goat Butter to the empty side of the skillet and let it melt.
- Once the butter has melted, pour the beaten eggs into the skillet. Let them sit for a few seconds, then gently scramble them with a spatula until they are cooked to your desired consistency.
- As the eggs are almost set, mix them with the turkey and spinach mixture in the skillet.
- Sprinkle the grated Parmesan cheese over the top of the scramble and stir until it's melted and evenly distributed.
- Add salt and pepper to taste.
- Garnish with sliced avocado and red pepper flakes, if desired.
