Little Billy's Thai Peanut Chicken Skewers

Little Billy's Thai Peanut Goat Butter chicken skewers are perfect for a weeknight dinner or as a crowd-pleasing appetizer at your next gathering. The combination of tender chicken, savory marinade, and creamy peanut goat butter sauce is sure to delight your taste buds!

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Chopped cilantro, for garnish

(For the Peanut Sauce):

  • 1/2 cup Little Billy's Peanut Goat Butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions:

  1. In a bowl, whisk together all the marinade ingredients: soy sauce, sesame oil, honey, minced garlic, grated ginger, lime juice, and red pepper flakes.
  2. Season the chicken cubes with salt and pepper, then add them to the marinade. Toss until the chicken is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to marinate.
  3. While the chicken is marinating, prepare the peanut goat butter sauce. In a small saucepan, combine Little Billy's Peanut Goat Butter, soy sauce, honey, rice vinegar, lime juice, sesame oil, grated ginger, and minced garlic over low heat. Stir until the ingredients are well combined and the sauce is smooth. If the sauce is too thick, gradually add water, a tablespoon at a time, until it reaches your desired consistency. Remove from heat and set aside.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated chicken cubes onto the soaked wooden skewers.
  6. Grill the chicken skewers for 5-7 minutes on each side, or until the chicken is cooked through and has grill marks.
  7. Once the chicken is cooked, remove the skewers from the grill and transfer them to a serving plate.
  8. Drizzle Thai Peanut Goat Butter sauce over the chicken skewers or serve it on the side for dipping.
  9. Garnish the skewers with chopped cilantro and enjoy!
